This can be made either with rice or for Keto using cauliflower rice (pictured above).

Ingredients

  • 1lb thinly sliced beef
  • 1lb shrimp
  • 3 Eggs
  • Broccoli (fresh or frozen)
  • 2 cups cauliflower rice or cooked rice chilled
  • 1 Tbsp. Olive Oil
  • 1/2 Tbsp. Sesame Oil
  • Soy sauce
  • 1 Tbsp. Hoisin sauce
  • 1 tsp Crushed red pepper
  • 1 tsp Sriracha hot sauce
  • Garlic powder (pinch
  • Ginger powder (pinch)
  • Curry powder (pinch)
  • Salt to taste
  • Black pepper to taste

Directions

  • I had a large shoulder roast that I cut up and vacuumed sealed in 1lb packages a while back. You can use any steak to your liking. Salt all sides very well and place in fridge for an about 5 hours. The salt will tenderize the beef.
  • About an hour before cooking, pull beef out of fridge and slice very thin and place in bowl. Stir in Soy sauce, crushed red pepper, Sriracha and Hoisin sauces and let sit until room temperature.
  • Prepare Cauliflower by food processing until it’s the size of rice. If using regular rice, cook as normal and place in fridge earlier in the day, as it needs to be chilled for fried rice.
  • Heat skillet with oils. Place riced Cauliflower in med. heated skillet and stir. Stir in Soy sauce, garlic, curry, ginger. You can keep adding Soy sauce to taste. Once the texture is almost to your liking, push rice aside and add eggs to scramble. Once eggs are done, mix in with rice. Empty contents in large bowl and set aside.
  • Add more olive oil to skillet. Pour in beef slices and brown. Add in broccoli and stir. Place shrimp on top. Add more Soy sauce and cover. Cook until shrimp is done. Stir and serve over rice.

Notes: I usually chop up a few green onions into the rice as I’m cooking it… just one of those very rare moments that I didn’t have any.
