Ingredients

  • Fresh or frozen Spinach (2/3 cup after all the water is squeezed out)
  • (6 cups fresh, Place in boiling water for 3 minutes then rinsed in cold water or 1.5 cups frozen, microwaved until thawed and drained)
  • 3 eggs, beaten
  • 1 cup grated mozzarella (or combo of any cheeses, cheddar, parmesan)
  • 1/4 c of chopped fresh Parsley or if you want to make it Italian chopped basil/oregano or even sage
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 Cup Almond Flour
  • 2 Tbsp. Whole Psyllium Husk (this holds it together)

Directions

  • Mix all ingredients together and form into balls. I used the cookie scoop. Each ball should be about 1 Tbsp.
  • Place on baking tray covered in lightly oiled parchment paper.
  • Bake at 400 degrees for approximately 20 minutes on middle rack. The top should be brown and crispy.

Serve with ranch dip, tzatziki, honey mustard dip, avocado dip or just eat by themselves.
