
Ingredients
- 4 thick Pork Chops
- 5 Garlic Cloves (diced)
- 10 Cherub tomatoes (diced)
- Purple onion (diced)
- Frozen spinach (thawed and drained)
- 3oz cream cheese (melted)
- 1/3 cup Italian cheese (grated)
- 1 Tbsp. Olive Oil
Stuffing:
- Heat a pan over medium heat with a little olive oil
- Sauté garlic, onion, tomatoes a bit, then add in spinach
- Stir in cream and Italian cheese until melted
Directions
- Slice pork chops to create a pocket.
- Fill pocket by spooning in stuffing mixture
- Heat skillet over medium heat with olive oil
- Add chops and cook about 4 minutes per side.
