Dressing

  • 2 Tbsp. green onion finely chopped
  • 2 Tbsp. Apple Cider vinegar
  • 2 Tbsp. Maple syrup
  • 1 Tbsp. Lemon juice
  • 1 Tbsp. Dijon mustard
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper

Salad

  • 1/4 cup olive oil
  • 5 cups kale chopped small
  • 1 cup chopped cabbage
  • 1/2 cup of craisins (I cut them in half). Or you can use dried cherries
  • 1/2 cup of walnuts or almonds or pecans chopped (you can roast in the oven at 375 for 8 minutes to get them really nutty if you please)

Directions

  • Whisk the dressing ingredients together in a small bowl.
  • Pour the olive oil over the kale and cabbage in a large bowl and massage it at least 60 seconds.
  • Pour in the dressing and dried fruit and nuts and stir well. It will keep in the refrigerator for 2 days.
