Turkey Meatballs

  • 1 pound ground turkey
  • ½ cup Italian breadcrumbs
  • ¾ cup onion, chopped
  • 1 egg
  • 2 tsp garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper

Tzatziki Salad

  • Sliced cucumbers
  • Kalamata olives
  • Cherry Tomatoes
  • Feta cheese
  • Tzatziki sauce

Tzatziki Dressing

  • 1 large English Cucumber
  • 1/2 cup Greek yogurt
  • 2 Tbsp Lemon juice
  • 2 tsp Garlic (minced super fine)
  • 1 Tbsp Fresh dill
  • Salt to taste

Meatball Directions

  • Preheat the oven to 400°F.
  • Mix all meatball ingredients in a bowl, then roll into 2-inch balls. Should come out to around 16 meatballs.
  • Bake for 20 minutes.
  • Place under the broiler on high for the last 2-3 minutes, keeping a close eye on them as to not to burn them.

Tzatziki Dressing Directions

  • Slice cucumber in half lengthwise. If you don’t use the English cucumber then scoop any seeds out.
  • Add ingredients to food processor until well chopped.
  • Stir in salt to taste.

Salad Directions

  • Slice cucumber and tomatoes. Place in bowl and add olives and feta cheese.
  • Spoon in Tzatziki dressing and mix. Refrigerate the rest of dressing for other uses.

Notes:

  • The Tzatziki dressing is from our Tzatziki Sauce recipe, but much thinner. Not straining it makes it thinner and perfect for a dressing.
  • We served this over white rice. You can use any grain of your choice.
