Ingredients

  • 6 Tbsp. olive oil, plus more for greasing
  • 4 cup old-fashioned rolled oats
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. freshly grated nutmeg
  • 1/2 tsp. salt of your preference
  • 1/8 tsp. ground cloves
  • 4 large eggs
  • 1 3/4 cup unsweetened applesauce
  • 1 3/4 cup milk
  • 1 Tbsp. pure vanilla extract
  • 1 cup raw pecans, chopped, divided
  • 3 small Gala or Braeburn apples, cored and cut into 1/2-in. pieces (about 3 1/2 cups)

Directions

  • Preheat to 375. Oil 13 x 9 baking dish. Mix together dry ingredients. In another bowl whisk eggs and then add liquid ingredients. Reserve 1/3 pecans for topping. Mix both bowls together and spread batter in pan. Top with reserved pecans.
  • Bake in top third of the oven until fully set and edges are browning. Approximately 45-55 minutes. Let cool 10 min. before serving.

Note: You can drizzle some Maple Syrup on top of each serving.
