
Ingredients
- 6 Tbsp. olive oil, plus more for greasing
- 4 cup old-fashioned rolled oats
- 2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. freshly grated nutmeg
- 1/2 tsp. salt of your preference
- 1/8 tsp. ground cloves
- 4 large eggs
- 1 3/4 cup unsweetened applesauce
- 1 3/4 cup milk
- 1 Tbsp. pure vanilla extract
- 1 cup raw pecans, chopped, divided
- 3 small Gala or Braeburn apples, cored and cut into 1/2-in. pieces (about 3 1/2 cups)
Directions
- Preheat to 375. Oil 13 x 9 baking dish. Mix together dry ingredients. In another bowl whisk eggs and then add liquid ingredients. Reserve 1/3 pecans for topping. Mix both bowls together and spread batter in pan. Top with reserved pecans.
- Bake in top third of the oven until fully set and edges are browning. Approximately 45-55 minutes. Let cool 10 min. before serving.
Note: You can drizzle some Maple Syrup on top of each serving.
