
Dressing
- 2 Tbsp. green onion finely chopped
- 2 Tbsp. Apple Cider vinegar
- 2 Tbsp. Maple syrup
- 1 Tbsp. Lemon juice
- 1 Tbsp. Dijon mustard
- 1/4 tsp Salt
- 1/8 tsp Black pepper
Salad
- 1/4 cup olive oil
- 5 cups kale chopped small
- 1 cup chopped cabbage
- 1/2 cup of craisins (I cut them in half). Or you can use dried cherries
- 1/2 cup of walnuts or almonds or pecans chopped (you can roast in the oven at 375 for 8 minutes to get them really nutty if you please)
Directions
- Whisk the dressing ingredients together in a small bowl.
- Pour the olive oil over the kale and cabbage in a large bowl and massage it at least 60 seconds.
- Pour in the dressing and dried fruit and nuts and stir well. It will keep in the refrigerator for 2 days.
