
Ingredients
- 1 Tbsp. Olive Oil
- 1 Lb. or 20 oz. mixed mushrooms chopped (we used; Portobello, Oyster, Shiitake, and White)
- 1 Small onion chopped.
- 3 Celery stalks chopped.
- 1/4 cup Celery leaves, chopped.
- 4 Carrots, chopped.
- 2c. ea. Chicken & Beef Broth
- 1 tsp. Garlic Chid.
- 3/4 cup Farro
- 1 tsp. Basil, oregano, Salt
- 2 Tbsp. Tomato Paste
- 1/2 tsp. Black Pepper
- 2 Tbsp. Soy Sauce
- 1 tsp. Thyme
- 1 14oz. Can Coconut milk*
*You can substitute the coconut milk with whole milk or use Half & Half if you want it creamier.
Directions
- On medium heat, add Olive oil, onion, celery carrots. Sauté for 3-5 mins.
- Reduce heat.
- Add tomato paste, soy sauce, Farro, and simmer for 25 mins.
- Pour in coconut milk and simmer another 10 mins.
- Add chopped fresh Basil and Oregano during last 10 min. (optional)
