Ingredients

  • 1 Tbsp. Olive Oil
  • 1 Lb. or 20 oz. mixed mushrooms chopped (we used; Portobello, Oyster, Shiitake, and White)
  • 1 Small onion chopped.
  • 3 Celery stalks chopped.
  • 1/4 cup Celery leaves, chopped.
  • 4 Carrots, chopped.
  • 2c. ea. Chicken & Beef Broth
  • 1 tsp. Garlic Chid.
  • 3/4 cup Farro
  • 1 tsp. Basil, oregano, Salt
  • 2 Tbsp. Tomato Paste
  • 1/2 tsp. Black Pepper
  • 2 Tbsp. Soy Sauce
  • 1 tsp. Thyme
  • 1 14oz. Can Coconut milk*

*You can substitute the coconut milk with whole milk or use Half & Half if you want it creamier.

Directions

  • On medium heat, add Olive oil, onion, celery carrots. Sauté for 3-5 mins.
  • Reduce heat.
  • Add tomato paste, soy sauce, Farro, and simmer for 25 mins.
  • Pour in coconut milk and simmer another 10 mins.
  • Add chopped fresh Basil and Oregano during last 10 min. (optional)
