Ingredients

  • 4 thick Pork Chops
  • 5 Garlic Cloves (diced)
  • 10 Cherub tomatoes (diced)
  • Purple onion (diced)
  • Frozen spinach (thawed and drained)
  • 3oz cream cheese (melted)
  • 1/3 cup Italian cheese (grated)
  • 1 Tbsp. Olive Oil

Stuffing:

  • Heat a pan over medium heat with a little olive oil
  • Sauté garlic, onion, tomatoes a bit, then add in spinach
  • Stir in cream and Italian cheese until melted

Directions

  • Slice pork chops to create a pocket.
  • Fill pocket by spooning in stuffing mixture
  • Heat skillet over medium heat with olive oil
  • Add chops and cook about 4 minutes per side.
