Ingredients

  • Chicken breasts or thighs
  • 1/2 cup Almond flour
  • 2 Tbsps. Arrow Root Powder
  • 2 Tbsps. Gluten free Panko crumbs
  • 1 strip of bacon for each piece of chicken
  • 2 Roma tomatoes chopped
  • 2 green onions chopped
  • 1 slice of cheese for each chicken breast
  • 1 tsp your fav BBQ sauce for each chicken piece
  • 1 tsp season salt

Directions

  • Fry bacon and don’t discard the drippings.
  • Mix flour, root powder, season salt.
  • Bread the chicken and fry in bacon grease. (add a little avocado oil if needed).
  • Place fried chicken on baking sheet and spread BBQ sauce, place a slice of bacon on each chicken piece and a slice of cheese.
  • Put in oven to melt cheese.
  • Sprinkle tomatoes and onions on top.
